Our beef is certified organic until it leaves our transport vehicle. We do wash, clean, and provide fresh clean transport floor covering according to USDA organic NOP standards. We do ask that our animals be processed first before other animals. Our current processor has committed to processor our animals first. Our processor also provides a live weight, hanging weight, and finished weight tracking for us. This is also a satisfaction of USDA Organic NOP Standards. The facility does use cleaning agents that are not approved for organic use but does not come in contact with the meat. Since there are no organic processing facilities here in Ohio we are not able to complete the organic claim once the beef leaves the transport vehicle. While it is here under our stewardship it is certified organic. So you will observe the products offered do not have certified organic in their description because the organic claim stopped at the transport vehicle.
We process our premium beef animals in the fall after the light is below 11 hours a day. Up to that time the grasses and forages are pushing their sugars to the top of the vegetation to capture sunlight. This mean the grasses and forages have a very high brix level and offer super nutrition to the cattle.
